Does anyone know the names of the tracks that were at the top of the hill in Natchez, Mississippi where the Natchez & Southern met the Mississippi Central?

What time period are you wanting – after TCS was implemented all tracks were given numbers.
Here is diagram from a 1980 ZTS book.
I have seen some documents that refer to tracks such as the coal track. I suspect the coal track was one of two tracks west of the west leg of the wye, but don’t know. I’m just trying to get a better idea of the lay of what was once there.
I see the map you attached shows the tracks to the Mississippi Central depot on the east side of the block instead of the west. This must be the map a local surveyor had seen when he told me he had looked for the remains of a bridge there while surveying and couldn’t find anything.
